Matcha Tiramisu with Marsala

This easy Matcha Tiramisu recipe blends creamy mascarpone, earthy matcha green tea, and a touch of Marsala wine to create an elegant no-bake dessert. 

Marsala is a fortified wine originating from Italy. Look for it in the fortified wine section of your local liquor store, amongst the Port, Sherry and Muscat.

Matcha Tiramisu with Marsala

Ingredients:

Matcha Syrup (for dipping)

  • ½ cup hot water (around 80ºC)
  • 1½ tablespoons matcha powder
  • 1 tablespoon Marsala wine

Mascarpone Cream

  • 1½ cups heavy cream
  • ½ cup sugar
  • 2 teaspoons matcha powder
  • 1 teaspoon vanilla extract
  • 1 cup (250g) mascarpone cheese, at room temperature
  • 1 tablespoon Marsala wine (optional, for extra richness)

Assembly

  • 24 ladyfingers (savoiardi)
  • Matcha powder, for dusting

Instructions:

  1. Make the Matcha Syrup:
    • In a shallow bowl, whisk 1½ tbsp matcha powder into the hot water until smooth.
    • Stir in 1 tbsp Marsala wine and let cool to room temperature. This will be used to soak the ladyfingers.
  1. Whip the Matcha Mascarpone Cream:
    • In a large bowl, beat 1½ cups heavy cream until soft peaks form.
    • Gradually add in ½ cup sugar, 2 tsp matcha powder, and 1 tsp vanilla extract. Continue beating until stiff peaks form.
    • Add 1 cup mascarpone cheese and 1 tablespoon of Marsala wine (optional). Gently fold until the mixture is smooth and well-combined. Be careful not to overmix
  1. Assemble the Tiramisu:
    • One at a time, quickly dip the ladyfingers into the matcha syrup (don’t soak too long or they’ll get mushy). Layer half of the soaked ladyfingers in an 8x8-inch dish or similar container.
    • Spread half the mascarpone cream evenly over the ladyfingers. Repeat with the second layer of dipped ladyfingers and finish with the remaining cream
  1. Chill:
    • Cover with plastic wrap and refrigerate for at least 4 hours (overnight is best) to let the flavors develop and the dessert set properly.
  1. Dust and Serve:
    • Before serving, sift 2 tablespoons of matcha powder over the top. Slice and serve!
